Keep up the great work!! I was looking for a healthier enchilada sauce that still had great flavor and this was it. It’s so difficult to follow recipes that call for things like “canned tomato sauce” It’s fine for people who live in your country – but nobody else knows what it is.

As for the chicken broth… feel free to use homemade if that’s what you prefer. I made it with my homemade tomato sauce and homemade chicken broth  (mad from rotisserie chicken carcass)) talk about depth of flavor…freezes well. I double the recipe and use extra sauce when I heat up leftovers. Whenever I open a can of chipotle chilis in adobo, I chop and freeze the remainder to make this even faster.

Yes I have-and I use your enchilada sauce for many Mexican dishes~! Ladle the hot enchilada sauce into the jars, leaving about 1/2″ of headspace.

Roll them up and place in a baking dish, seam-side down. Add the chili powder, cumin, cayenne, bouillon cube and some salt and pepper and cook until the spices darken and their flavors are released, about 2 minutes. I followed the recipe exactly and the sauce had way too strong of a chili powder flavor to it, I nearly gaged.

The result was a wonderfully tasting Enchilada Sauce with all the flavor and the tiniest, perfect amount of heat. You can double it and freeze the rest.

This sauce is AMAZING! I would have never thought to make enchilada sauce home made. Put about 1/4 cup of the filling on to each tortillas. I can’t tell you how much I enjoy this sauce. Add flour and cook for 1 minute, whisking constantly. Both look good with great reviews.
