With a coconut milk soup broth this good, you could put almost anything into it and it’ll be scoffed down!! Small things amuse small minds (me, not him ). That said, the instructions were really easy to follow and even though it did require a lot of prep work, it was so worth. Asian greens are ideal – and tons of it, because it wilts down. I also added two heads of bok choy to make it more of a meal, which turned out well. I used shredded chicken instead of shrimp. So Good, Could Also Add Bean Sprouts Or Anything Else You Can Think Of!!!

The curry and the coconut milk balance each other just right. I made it for lunch today. Skip the oil, slice the ginger and lemongrass and throw all ingredients in the left column, plus 4 cups water in a large pot. There's just enough for me for lunch today. This was great!

Not this one. This was so flavorful, a lot of curries don’t put in tomato sauce but I thought it was a great addition. So cozy, so good. This recipe is amazing! I used dried and it still tastes great. I feel like I say this with almost all my savoury recipes…. Can you substitute chicken for the shrimp? I'm the one that submitted this recipe and I just wanted to add a little note: If you can't find lemongrass, most stores carry lemongrass paste.

Just made this soup as the base for a friendsgiving meal. You can serve it as is, you can add rice, you can add rice noodles, you can sub out the shrimp for chicken, or you can keep it completely meatless.

This is the best Thai coconut soup I've had. Heat coconut oil in a large stockpot or Dutch oven over medium heat. Truly tastes like a restaurant takeout. Lately I am not able to find that particular brand and most red curry pastes on the market are not very spicy. If it’s possible to freeze it without the shrimp, do that, and add fresh shrimp when re-heating it.

I added 1 chicken breast sliced thin in bitesize pieces while the soup was in the simmer because when we get this at our favorite Thai place, this is how they make it!

It worked perfectly because it was more brothy and less thick which I like. Was yummy!
